Memorable Food Experience, Satisfaction, and Behavioural Intention: An Application of the S-O-R Paradigm

Abstract

This study examines how the dimensions of memorable food experiences influence tourist satisfaction and behavioural intention, and assesses the moderating role of food involvement within the Stimulus–Organism–Response (S-O-R) framework. Data were collected from 428 domestic tourists visiting Gaziantep, a UNESCO Creative City of Gastronomy, using purposive and convenience sampling. Structural equation modelling was applied to test the proposed relationships. The results show that all eight dimensions of memorable food experience positively influence satisfaction, with the gastronomic novelty and curiosity dimension emerging as the strongest predictor. Satisfaction, in turn, strongly increases behavioural intention. Food involvement moderates two relationships: it strengthens the effect of learning about exotic food culture on satisfaction, but weakens the effect of the gastronomic novelty and curiosity dimension on satisfaction. The study extends the S-O-R framework by conceptualising food involvement as a dimension-specific boundary condition and provides practical insights for designing more memorable and satisfying gastronomic experiences.

    Çağrı Sürücü is an Assistant Professor at the Faculty of Tourism, Çankırı Karatekin University. He holds a Ph.D. in Tourism Management from Gazi University (2023). He received his master’s degree in Tourism Management from Muğla Sıtkı Koçman University (2016) and completed his undergraduate studies in Hospitality Management at the Faculty of Tourism, Muğla Sıtkı Koçman University (2013). His primary research interests include gastronomy, tourism management, tourism marketing, and food and beverage management. He has authored books and book chapters, published articles in Turkish and international peer-reviewed journals, and served as a reviewer for various academic journals in the fields of tourism management, tourism marketing, gastronomy, and food and beverage management.

    Azize Hassan is a Professor at the Faculty of Tourism, Ankara Hacı Bayram Veli University. She graduated from the Department of Tourism and Hotel Management Education at the Faculty of Vocational Education, Gazi University, in 1985. She received her master’s degree from the Production Management and Marketing Program at Gazi University in 1989 and her Ph.D. from the Tourism Program at Istanbul University in 1993.
